Holiday Reindeer Cupcakes
If you’re anything like me, it’s easy to let the holidays take a bit of your sanity while trying to get everything perfect and pretty for your friends and family. There are church potlucks, school parties, gifts for friends and neighbors, work parties and more- and it’s hard to keep up. I often like to give simple, delicious treats for my family and friends during the holidays and today I am super excited to share some fun and easy cupcakes using Wilton holiday products from Jo-Ann Fabric and Craft Stores!
I like to keep gifts simple and heartfelt- delicious classic treats with fun decorative touches- that don’t take much time to make. These fun Naughty or Nice cupcakes and Reindeer Cupcakes are perfect to give as neighbor presents, teacher gifts, class parties- or just as delicious fun treats for your family.
Not only are these cupcakes super easy to make- they are fun, and can are totally kid-friendly! These actually would make for a fabulous activity at a party for kids as kids as a fun way to encourage their creativity. I love all of the fun decorating kits that Jo-Ann has- they make things so simple and fun!
I’m also sharing my classic chocolate cupcake recipe. Its delicious, light, fluffy and full of chocolate flavor- and come together almost as easily as boxed mix.
For the delicious chocolate cupcakes, you’ll need:
• 1/2 cup (42g) unsweetened cocoa powder
• 3/4 cup (95g) all-purpose flour
• 1/2 teaspoon baking soda
• 3/4 teaspoon baking powder
• 1/4 teaspoon salt
• 2 large eggs, at room temperature
• 1/2 cup (100g) granulated sugar
• 1/2 cup (100g) light brown sugar
• 1/3 cup (80ml) vegetable oil
• 2 teaspoons vanilla extract
• 1/2 cup (120ml) buttermilk
In a large bowl, combine the cocoa powder, flour, baking soda, baking powder, and salt together until thoroughly combined.
In a medium bowl, whisk the eggs, sugar, brown sugar, oil, buttermilk, and vanilla together until completely smooth.
Pour half of the wet ingredients into the dry ingredients and stir gently.
Add the rest of the ingredients in, and stir to fully combine. Do not overstir- you will have a few small clumps which is ok.
Over stirring will give you tougher, denser cupcakes.
For the decorations, you’ll need:
• Wilton Reindeer Cookie Kit
• Wilton Naughty or Nice cupcake toppers and baking cups
• Wilton Right Recipe Muffin Tin
When the cupcakes are done, let them cool completely.
Ice half your cupcakes with white buttercream.
Add brown gel icing color to second half of buttercream mixture and stir well to mix.
Ice second half of cupcakes with brown icing.
Add sprinkles and “Naughty or Nice” toppers to the white iced cupakes, and add reindeer ears, eyes, noses and bow ties to brown iced cupcakes.
To get the ears to stick up a bit, I gently pushed them slightly into the cupcake itself. Just placing the ears onto the top of a cupcake made them slide off, so don’t be afraid to gently push the ears in a bit.
If you’re encouraging kids to decorate the cupcakes, it’s best to ice them all and set decorations out on a table and let kids get to creating! My kids LOVE making cupcakes and think it is so much fun. They make googly eyes, sometimes a nose ends up lower than a bowtie- but it’s always a blast and we make great memories. Don’t be afraid to let your kids get in to the fun!
