Jacques Torres has earned the title "Mr. Chocolate." He was the youngest chef ever to win France's prestigious M.O.F medal in Pastry, then moved to the United States, where he became a James Beard Award-winning pastry chef. He is the author of three books, has hosted his own television series on Food Network, and is the dean of pastry arts at the International Culinary Center. Chef Torres opened his namesake chocolate shop in Brooklyn more than 15 years ago, and today boasts an artisan chocolate factory and nine shop locations.

Chef Jacques Torres kicks things off with an overview of cake elements you can prepare in advance. Then make a unique almond sponge cake, milk chocolate ganache and praline before prepping a mirror glaze for a bakery-worthy finish.
"Mr. Chocolate" walks you through the primary types of chocolates and demystifies the technique of tempering. Chef Jacques also demonstrates how to heat and cool chocolate to its optimum form. Then use your tempered chocolate to make a stunning chocolate flower.
Finally put the elements from Lessons 1 and 2 together as you build your cake. Learn how to construct your layered cake with the fillings you've made. And finish in two dramatic ways: with a mirrored chocolate glaze and a piped ganache finish.
