SUPPLIES & TOOLS:

CUPCAKES:

  • Standard muffin pan
  • Decorator bag and tip, 6
  • Ready-to-use rolled fondant
  • Pink-colored sugar
  • Decorated eggs baking cups
  • Decorator brush set
  • 8" straight spatula
  • Pink jelly beans
  • Candy-coated mini-chocolates
  • Mini gum squares
  • 1 recipe butter cream icing
  • 1 batch of cupcakes

BUTTER CREAM FROSTING:

  • 1/2 cup solid vegetable shortening
  • 1/2 cup butter or margarine*
  • 1 teaspoon Wilton clear vanilla extract
  • 4 cups sifted confectioners' sugar (approx. 1 lb.)
  • 2 tablespoons milk**

*Substitute all vegetable shortening and 1/2 teaspoon Wilton No-Color Butter Flavor for pure white icing and stiffer consistency.

** Add 3-4 tablespoons light corn syrup per recipe to thin for icing cake.

DIRECTIONS:

BUTTER CREAM FROSTING:

  1. Cream butter and shortening with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry.
  2. Add milk and beat at medium speed until light and fluffy. Keep icing covered with a damp cloth until ready to use. For best results, keep icing in an airtight container in refrigerator when not in use. Can be stored 2 weeks. Rewhip before using. Yield: 3 cups

DECORATING CUPCAKES:

  1. Roll out fondant. Using pattern, cut 2 ears for each cupcake. Let dry overnight. Brush inside of ears with water and sprinkle with colored sugar.
  2. Bake cupcakes in standard muffin pan using decorated eggs baking cups. Let cool.
  3. Using 8" straight spatula, ice cupcakes smooth with butter cream icing.
  4. Referring to photo, pipe tip ball snout. Position gum teeth, jelly bean nose and mini chocolate eyes. Insert ears.
