These fun twists on a Russian tea cookie- adorned with sprinkles instead of powdered sugar- are a delightful addition to any Leprechaun’s Pot ‘o Gold! These cookies are incredibly rich, but soft and crumbly and slightly sweet. They are a perfect treat for St. Patrick’s Day fun!
I like to make little “Leprechaun Parties” for my kids on St. Patrick’s Day- we set out glittery shamrocks, hang shamrock garland (Joann Fabrics and Crafts have the best packages of foam shamrock cutouts- perfect for quick and easy garlands or wreaths!), and make fun Irish themed treats
To make these cookies, you’ll need:
-1 cup butter, softened
-6 tbsp powdered sugar
-1 tsp almond or vanilla emulsion
-2 ¼ cup all purpose flour
-Wilton Parchment Paper
-Wilton Gold Sprinkles
-Jo-Ann Fabric and Craft Store line Green Polka Dot Mini Cupcake Liners
-Plastic pots ‘o gold, glitter shamrock accessories, green treat bags, and leprechaun hats to serve with
Preheat oven to 350 degrees.
In a large bowl, cream butter and vanilla or almond emulsion. Add sugar and mix well.
Slowly mix in flour, being sure to mix well.
When dough is thoroughly mixed, roll into small balls- I like to make mine a little bigger than a marble for extra tiny leprechaun sized cookies!
Bake for 8-10 minutes, until lightly browned.
Remove from oven, and roll balls in sprinkles while still warm (don’t burn your hands- let them cool a bit- about 1-2 minutes).
Let cool fully, and place in plastic buckets of gold, or serve in individual green polka dot mini cupcake wrappers.
I also like to serve these in mini glittered leprechaun hats- I line the inside with a cupcake wrapper (as they aren’t intended for food serving).
I also love to hand these out on St. Patrick’s Day at school (if your kids class allows home baked treats) in these adorable little green treat bags. Adorn with a shamrock for an extra special touch! These little cookies are delicious, and so easy to make- your little leprechauns will lovethem!
