Chocolate Zucchini Loaf Cake

SUPPLIES & TOOLS:

  • 2 cups all-purpose flour
  • 1 1/4 cups granulated sugar
  • 1/3 cup cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups shredded zucchini (about 1 medium)
  • 3 eggs
  • 3/4 cup (1 1/2 sticks) butter, melted
  • 4ozs bittersweet chocolate, melted
  • 1 tsp vanilla extract
  • Wilton® It's Simply Delicious Vanilla Icing
  • Sprinkles
  • 9"x 5" loaf pan
  • Non-stick spray
  • Cooling grid
  • Bowl
  • Spatula

DIRECTIONS:

  1. Preheat oven to 325°F. Spray 9"x 5" loaf pan with vegetable pan spray.
  2. In large bowl, combine flour, sugar, cocoa powder, baking powder and salt. Set aside. In separate bowl, combine zucchini, eggs, butter, chocolate and vanilla. Add mixture to flour; stir just until combined. Pour into prepared pan.
  3. Bake 73-78 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan. Turn out onto cooling grid to cool completely. Ice top of cake with Vanilla Icing and sprinkle with sprinkles.
  4. Makes about 12 servings.
