DIRECTIONS:
- One day ahead, make cookies. Prepare cookie dough following its given recipe instructions. Roll out dough to 1/8" thickness. Using cookie cutters, cut out 1 to 2 bunny and 8 to 10 Easter egg cookies. Bake and cool.
- Make royal icing. Using meringue powder, prepare one batch of royal icing. Divide icing into four equal portions. Using icing colors, tint icing as follows:
- Batch 1: periwinkle (combine Sky Blue and Violet icing colors)
- Batch 2: yellow (combine Lemon Yellow and Golden Yellow icing colors)
- Batch 3: pink (touch of Red-Red icing color)
- Batch 4: blue (touch of Sky Blue icing color)
- Thin all batches to flood consistency.
- Decorate cookies. Prepare four decorating bags, separately, with thinned periwinkle, yellow, pink and blue icing. Using periwinkle icing, outline and flood in bunny cookies. Using yellow, pink and blue icing, outline and flood Easter egg cookies. Let all cookies dry overnight, at least 8 to 10 hours.
- On day of, make cake. Prepare cake batter following its given recipe instructions. Bake and cool 2 cake layers. Level, fill and stack for 4 in. high cake.
- Tint icing. Using icing colors, tint buttercream as follows:
- 2 cups buttercream blue (combine Sky Blue and Violet icing colors)
- 2 cups buttercream pink (combine Rose and a tiny touch of Sky Blue icing colors)Ice cake. Ice cake smooth, using blue for the bottom half and pink for the top half and top of cake. Allow the two colors to blend at the middle.
- For easier decorating, place colors in cut decorating bags, then pipe onto cake. Decorate cake. Prepare decorating bag with tip 4B and remaining pink and blue icing. Pipe star border around top of cake. Cover top of cake with Easter sprinkles. Attach egg cookies to sides of cake. Use extra buttercream to attach, if needed. Place bunny cookie on top of cake. Prop up with a lollipop stick, if needed.
