SUPPLIES & TOOLS:
- 8" nonstick cake pans, 3
- Favorite cake recipe, enough to bake three 8" cakes
- Parchment paper
- Cactus cookie cutter
- Favorite sugar cookie recipe
- Wilton® cookie sticks
- 16oz cans of Wilton white creamy decorator icing with medium consistency, 2
- 8" cake round
- Wilton fondant roller
- Wilton confetti pouches and sprinkles in bright colors
- Wilton Rolled Fondant assortment in neon colors
- Wilton icing spatula
- Wilton leaf green gel coloring
- Wilton icing tips #32 and #2
- Wilton Featherweight decorating bags
DIRECTIONS:
- Trace the bottom of each nonstick cake pan with parchment paper, cut out and place inside each pan.
- Make cake batter and bake following recipe.
- Allow cakes to completely cool. Cake can be wrapped in plastic wrap once cooled and chilled in the fridge for a few hours.
- Chilling the cake makes it easier to cut and level each layer.
- Mix all sprinkles into a bowl, set aside.
- Secure one 8" cake with buttercream frosting on 8" cake round. Cut the center of the cake out, about a 3" circle. Fill center with sprinkle mix and frost around the center of the cake. Cut the center of the second cake out, stack on top and fill with sprinkles. Frost around the center of the second cake. Stack the third cake on top and frost top of the cake and the sides. The cakes just need a crumb coat because they will be covered in fondant.
- Roll out one color at a time of fondant. Cut out a 12" strip that is 2" wide. Then make cuts along one side every 1/2" to resemble fringe. Wrap around the bottom of the cake. Each layer of fringe will need more than one strip of color. Repeat steps until sides are fully covered.
- Bake sugar cookies using cactus cookie cutter. Allow to completely cool.
- Dip Wilton cookie sticks into thick icing and place on the back of cactus cookies. Allow icing to completely dry.
- Color a little Wilton white creamy decorator icing with leaf green gel coloring. Put Wilton icing tip #32 into Wilton Featherweight Decorating bag. Fill with green icing and pipe long vertical lines down cactus cookie.
- Use Wilton icing tip #2 and white icing to add dots along cactus cookie.
- Stick cactus cookies into the top of the cake to make cake topper.
