Standing Bunny Cookies

SUPPLIES & TOOLS:

  • Favorite sugar cookie, royal icing and buttercream recipes
  • Wilton® Place & Time™ Bunny cookie cutter set
  • Circle cookie cutter
  • Wilton® grass icing tip, #233
  • Wilton® drop flower tip #2D or #1B
  • Wilton® food coloring gels in kelly green and lemon yellow
  • Wilton® disposable icing bags
  • Toothpicks
  • Baking sheet
  • Rolling pin

DIRECTIONS:

  1. Mix and roll out sugar cookie dough. Use bunny and circle cookie cutters to make multiple sets. Putting cookies on cookie set and then placing it in the fridge for a few minutes before baking will help keep the shape of the sugar cookies.
  2. Preheat oven and bake cookies following cookie recipe
  3. Once cooled, flood bunny cookies with white royal icing and set aside until completely dry.
  4. Use a thick royal icing as a "glue" to stick the bunny cookies to the circle cookies. If the bottom of the bunny cookie is too rounded, even it out with a sharp knife. This will make it easy to place on top of the circle cookie. Cover the bottom of the bunny with thick royal icing and center on circle cookie. Hold for a minute to allow the royal icing to harden so the cookie will stand on its own.
  5. Make a stiff buttercream frosting, set aside some white buttercream for bunny tails. Color a portion of buttercream green using kelly green and a little lemon yellow food coloring.
  6. Cut the tip of an icing bag and drop a flower tip into the bag. Fill it with white buttercream. Swirl a big bunny tail onto the decorated side of the bunny cookie.
  7. For the grass cut the tip of an icing bag and drop tip #233 into the bag. Fill it with the green buttercream. Right above the circle cookie gently add pressure to the icing bag while pulling it up and away from the cookie. This will create a grass effect.
